Anyone have any really good goose recipes? Trying to get my dad to make/bake/cook me one that he killed this year and my step always has her NOT SO HOT cooking ideas (Shall I tell you about the turkey roll we had last Thanksgiving? YUCK)...:shiner:

So if he has a good recipe, then he doesn't have any excuses and I won't have to put up with her (or her friends) cooking ideas! :spam:

Try going to the archives for the rec.hunting newsgroup. Once there plug in "goose recipes" in the subject section and read through the search results. Might be something there of interest.

As a "heart patient", I know that duck and goose are on the "no-no" list.

This usually means that they are fatty birds (as opposed to upland birds). Any recipes that cause fat to drain away is probably a good idea and will improve the taste.

Check that out again and ask them what the difference is between domestic and wild fowl.


A decent goose recipe might be worth messing with but, they are just too darned greasy to suit my liking.

What we do with our geese is breast them out and make jerky. While that won't work in this instance, you might want to just try a few kabobs the next time you make them. Cut the meat into chunks and marinade in Coke and Italian dressing. Then wrap bacon around the goose chunks before skewering. Cook on gas grill until bacon done.

Duck and goose kabobs are awesome....
