Actually I made some killer ribs this weekend on the Q with a pretty good rub. If I find the container I'll let ya know.

Here is the base one listed:

Mix the following:

1 TBSP salt,
1 TBSP brown sugar
2 TBSP paprika
1 TBSP chili powder
2 tsp freshly ground black pepper
1 tsp ground cumin
1 tsp garlic powder
1/2 tsp onion powder
1/4 tsp ground red pepper.

Combine all ingredients (makes about 1/4 cup)

Rub mixture into the meat - (this recipe is enough rub for about 2 lbs of venison.)

Grill in your usual manner.


I change it up slightly.... but this one is great as it is....

I mixed my own Emeril's rub for years until he started offering it commercially. His is better in the store bought version than the home mixed version...and it's cheaper that way, too.

I use Hot Smoked paprika half/half with sweet and most always add more cumin.....

I like mine personalized.......

1/4 tsp habenero powder

2 tsp fresh, minced cilantro

Rub the meat with the pulp of one fresh kiwi (adds no flavor but makes for really tender meat!) then brush lightly with olive oil.

Vigorously rub in the dry mix, let stand in the fridge for a couple of hours, then head to the grill! I like to throw in wet mesquite and apple wood chips for a bit more flavor.

K, big guy, some other ideas...

I love this one:

1 cup br sugar
2 Tbs paprika
1 Tbs chili powder
1 Tbs Coleman's dry nustard
1 Tbs onion powder
1 Tbs celery seeds
1 Tbs Lawry Seasoning

Here's another, with a barbecue sauce to go along with it, from a place called Vining's Inn in Georgia:

RUB
1/4 cup sugar
1/4 cup kosher salt
1/4 cup chili powder
2 Tbs onion powder
2 Tbs garlic powder
2 Tbs paprika
1/2 tsp cayenne pepper

SAUCE
1/2 onion, diced
2 jalapenos, diced and seeded
2 cups tomato or V-8 juice
1/4 cup br sugar
1/4 cup cider vinegar
1/2 - 1 cup Texas Pete, to taste

Whoops! Sorry that is supposed to be 2 Tbs onion powder, not another 2 Tbs chili powder...:silly:

I ended up doing this one for my 1st..

1/2 cup brown sugar
1/4 cup paprika

Let me tell you if there as good as they look and smell I'm in heaven!!!

I did both the rub and sauce from Vining Inn. The chicken has been sitting in the rub since last night an the charcoal is almost ready. I will do this low and slow for about two hours adding some apple wood for smoke. The I'll slather it with the sauce and let it get all happy (as Emiril likes to say) covered for a bit, then add some more sauce uncover and let it dry out a bit. I used a lot of the Texas Pete's, too, so it'll be a stinger...:peace:

P.S. Plus I got a bloody mary going...:-)

If the blood is spurting, apply a tourniquet or pressure and call 911. Visit after dinner. By then the hospital ER Dr. may have seen her once.

Don't even bother to think about it. I already told Nick that I can't renew my membership until I get employed. The best offer I've had in 7 months is 3rd shift in Downtown Detoilet. Nobody close by is hiring due to the economy/election. This is Bullshit!

I'm happy that Smokepole has such confidence in me.

But I am enjoying my "Staycations" while looking for a job. (Though I will be chauffering my mother around Northern MI near the end of July. Stuff that was planned (tickets bought, etc.) when Dad was still alive at Christmas.) She can go to the shows, I'll go fishing.

Unless I have a job by then!

My doctor, who I refer to as Herr Doktor!, has suugested that if I wish to live to see Christmas a dietary change is in order. Banished, at least temporarily, is anything containing calories, sodium/potassium, or flavor.

I can handle a low calorie diet. Easy. I can handle a low sodium diet, not so easy, but doable. A low calorie/low sodium/low potassium diet is proving a bit.... bland. I've run out of ideas for steamed tilapia, steamed perch and steamed cabbage. I can have all the steamed water I want.

Anyone got any ideas? Better yet, where, in the Detroit Metro area, can I purchase beef or chicken that hasn't been injected with solium to enhnace flavor? Everything available in big-name stores has been pumped full of "at least a 10% solution to enhance flavor & moisture", or some derivetive of that statement.

Try a variety of seasonings that don't have sodium in them. You might try Googling the subject and see what you find.

And there is quite an understatement! The "half a bubble off plumb" attitude around here is why I love this forum! Some of the other forums I've tried to participate with have been.... well, like my new diet; BLAND and lacking variety!

There is no room currently in the hospice near them in Cheboygan. Ka-ching! Another $6,000. They've burned up their inheritance of Bert Baker's Used Cars making their father suffer a lingering death with no hope of recovery.

"Pull the plug." It's in my Mom's Medical Power of Attorney, it's in my Medical Power of Attorney.

Like Grandpa Bill used to say... "It's like a monkey pissing into a cash register. Sooner or later it's going to run into a lot of money!" :piss:

My advice... Go to the Eastern Market for uninjected chicken. Take up fishing. Fillet table to dinner table, with only the salt you added. Hook up with Fbuckner. While Kroger's is recalling Nebraska Beef Co. hamburger for E. Coli., you'll be making spaghetti and tacos worry-free!

Save some coin and salt, buy wholesale!

That one TV chef from Seattle, Jeff something, who turned out to be a perv (there's the rub...LOL!), was an excellent cook and author, I still have several of his cook books. Anyway, he advised the low sodium folks to use wine as a flavor enhancer. I still have the book, The Frugal Gourmet Cooks With Wine. If you want the book, and I can find it, you can have it...

Actually, I have the book in my library already, but it was a forgotten item! Thank you for your kind offer though, it is truly appreciated.

The people I "meet" hanging out here make it worthwhile; it's good to know there are still decent people around!

Cooking with Boones Farm Sangria.... might be fun! I have some fond memories.... I kinda remember, anyway, of nights featuring Boones Farm.

Michael, the hardest decision is to see a close relative lie brain dead in a fetal position for a couple years in a county hospital, while your cousin has hopes of her father recovering.

Sooner or later, pneumonia sweeps through the hospital and empties the beds. The only savings is on the pall-bearers. A 300+ lb man weighs less than 100 lbs. after a couple years on the feeding tube.

But enough of these happy thoughts!

Why does smoked fish from Northern MI seems to be moist with a salty taste?

How do they brine it?

Besides... if you have it codified in your medical power of attorney, it's a done deal for your heirs.

One of the things I need to do is write out how to access my crap for my sister. Codes, keys, passwords, combination locks, safety deposit boxes, gun parts, who to trust when selling the guns and parts, mausoleum keys. The list is endless.

Good news: salmon marsala is coming along; still needs work, but should actually be kinda good!
Bad news: most wines, though low in sodium, are quite high in potassium, which is also a restricted item on the diet.

Well, I'll forge ahead with the marsala sauce anyway, might be good to have around once I hit the less restricted phase of this diet.

...Vass, you make a brine out of Kosher salt mixed with water. Then you soak the fish or meat in it for a couple of days in the fridge. Then smoke it slowly, with a "water bath" in the smoker to keep it moist.
...When I smoke fish, Turkey, brisket, or other meats, I also baste the meat occasionally with a concoction of gray poupon mustard, Jack Daniels, melted butter, a little pepper, and some salt.

Bacon chocolate chip cookies-(this is for a FULL batch)

3/4 cup butter(It has been suggested that using 1 full cup of butter works best due to cookie dough dryness)
2/3 cup packed brown sugar
2/3 cup granulated sugar
1 teaspoon hazelnut (or almond) extract *Edit- It has been suggested that the almond flavouring may be overpowering to the flavour of the cookie, feel free to add this ingredient to taste*
1/2 teaspoon vanilla extract
1 egg (It has been suggested that using 2 eggs works best due to cookie dough dryness)
2 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup white chocolate chips
1 cup dark or semi-sweet chocolate chips
2 cups bacon bits (if preferred, you can separate the dough into two parts and only make half of the dough into bacon cookies, in which case you'll only want to use 1 cup bacon bits)

*An important note- Be sure to use real bacon bits, not Bacos *See large print at the bottom of this post*

Also, you can make your own bacon bits, just make sure you pat down the bacon chunks with paper towels to remove as much extra bacon grease as possible. *Edit* one of my readers made their own bacon bits and found out that apparently it takes about 2lbs of bacon to make 2 cups of bacon bits, just for future reference.

Directions-

preheat oven to 350 degrees fahrenheit.

Beat together the butter, sugars, flavouring and eggs until creamy. In another bowl, sift together the dry ingredients. Add the dry ingredients to the butter mixture and stir together. Dough will be slightly soft. If you want a cakier cookie, add another half cup of flour. Add in chocolate chips and bacon bits. Stir until well integrated. Place dough on a sheet of waxed paper and refrigerate at least an hour. Remove dough from fridge, pinch off 1 1/2 inch pieces of dough and roll into balls. Set dough balls about 2 inches apart on an ungreased cookie sheet. Flatten dough balls slightly with your fingers in the center.

Bake cookies for about 10 minutes, or until the dough starts to turn golden brown. Allow cookies to cool on a cooling rack while you ready the glaze.

Maple cinnamon glaze-

2 cups powdered sugar
1 tablespoon maple extract
1 teaspoon vanilla extract
1 teaspoon cinnamon *edit- it has been suggested that 1 teaspoon may be a bit much, so go ahead and add to taste*
enough water to make a thick glaze (I used about 3 tablespoons)

Mix all ingredients together until smooth and creamy. If lumpy, use a whisk.

Spread a small amount of the glaze on the top of each cookie and top with a small piece of crisp cooked bacon.

Voila! Delicious!

Just a little note-
I am in no way saying that I am the first person to create "bacon cookies", I'm just sharing with you how I came about making a batch of them myself (although I did do a web search and wasn't really able to find much on cookies with bacon in them, not everyone posts stuff on the internet.) And the recipe that I came up with.

If you're upset because they're made with meat, you can just as easily make them with egg substitute, earth balance instead of butter and fake bacon.

Also, if you do not like the bacon cookies, don't make them. Insulting me because you can't handle the bacon/cookie combo is completely unnecessary. You're more than welcome to keep your opinion to yourself. These are purely a novelty/experimental cookie.

I am not planning on making meat cookies a regular part of my baking profile, so don't worry. There will be no sausage patty cupcakes or beef candy... Although I did make meat cupcakes for April fools day...

I just needed to try something fun. Bacon cookies ARE fun. Bacon is funny.
It just so happened to taste pretty good.

Apparently, in us roundish fellows, potassium has negative effects on blood pressure, and contributes to the development of gout; which I mistakenly thought affected only the feet, but can impact all the joints in the body.

For years I thought gout was the stuff holding the tiles in my tub... :score:

I should do that. I work with people who use salvia, herbal teas, salt substitute, soy milk, fat-free everything... they don't know good food when they see it. they would absolutely pass out at the sight of bacon.

I've got a recipe for deep-fried Oreo cookies (no kiddin') if the bacon makes 'em squeemish.

Another one I haven't tried. That, and the beer-batter deep-fried pepperoni pizza.

I think I'm starting to understand America's obesity problem...

Here is a dry rub mixture I put on butterfly pork chops before grilling.

1 t salt
2 t fresh ground black pepper
2 t sage
2 t cumin

This is enough for 6-7 pork chops. Just rub it on the chops and let them sit for 10 minutes before grilling. It's simple, easy, and really, really good.

Im not sure about the rub part but I had some ribs with a homeade rub in it and I think what set it off was the honey dijon mustard which it rested in for about an hour. killer !!!!
