Just tried this off the top of my head and it was great so I thought I would pass it on.
Rabbit pie
1 pie crust
2 cups rabbit (cubed)
2 tablespoons butter
2 tablespoons olive oil
1 cup carrots (fresh or canned)
1 cup green beans (fresh or canned)
1/2 cup mushrooms
onion salt
garlic salt
salt & pepper
Preheat oven to 400
1. Over medium heat brown rabbit in butter and olive oil, season with equal amounts of salt, pepper, onion salt and garlic salt. 5-10 minutes cook time, do not drain.
2. Mix carrots, beans and mushrooms in with rabbit and cook additional 2 minutes over medium heat.
3. Add everything into pie crust and gently pack down.
4. Bake 30 minutes at 400 degrees
If done right the rabbit will come out as tender as a deer backstrap.
