Mix some mayo and honey mustard in a 2:1 ratio, slice some red onion, preheat oven to 375.

Lightly salt and pepper filets, coat each filet with mayo/mustard, place on baking sheet skin down and bake until fish flakes and turns opaque. Can be up to 15 minutes depending on thickness of fish.


OR:

Halibut Packets

Combine sliced mushrooms, tarragon leaves, lemon juice, melted butter, salt and pepper in a small bowl. Lay each filet on a piece of aluminum foil and spoon mixture over top. Lay sliced zucchini and thin lemon slices over fish and spoon a little more mixture over that.

Fold foil over fish and crimp to seal. Grill or bake at 375 for about 15 minutes, open at table by ripping open foil carefully. Watch out for the steam.

This is one I like real well.

In a large glass bowl, combine
1/4 cup of lemon juice
2 tablespoons of extra virgin olive oil
2-3 cloves of garlic copped fine
1/2 cup parsley
salt and pepper to taste
Place 2 halibut steaks in bowl, cover and refrigerate for 20 minutes
remove steaks and place on the grill over medium heat for 10-15 minutes per inch or untill it flakes with a fork.

I'm heading for Alaska on the 22 of this month. We fish out of Sitka. This is the 5th year. They changed the limits this year on buts. Being that you can't catch as many this year, we are hoping that we get into some big ones.

The guys on the charter we took said the big ones usually were not as good tasting as the smaller ones. Good luck
