Not sure if this fits in the category, but I have a couple good recepies if you have a big drum style smoker (these don't work well on an electric.)
First I'll share is smoked cabbage, and while it may sound unappetizing, it is awesome if you try it.
First step is to core out the cabbage, best done with a sturdy table and a good knife.
2nd, apply a coating of butter to the outside and inside of the cabbage (the hole you just cored out.)
Next, coat it in a decent layer of spices, I like to use garlic pepper blend, black pepper, and a little bit of seasoning salt.
Place a whole stick of butter into the cored out area of the cabbage. (Ive tried less and it just isn't the same, sorry weight watchers.)
Finally, wrap the cabbage in 2 layers of tinfoil.
Now onto the cooking!
The temp of the smoker should stay around 275-300, but this is smoker dependent so it may take you a few times to find the temperature suited for your smoker.
A cabbage will take 4+ hours to cook this way, so get it started EARLY so you can eat it with dinner or whatever.
In the final 15-20 minutes, open the tinfoil up a bit to fully open depending on how smokey you want the cabbage to taste.
Enjoy!
