View Full Version : Marinated Pheasant

1/2 cup olive oil
1/2 cup fresh squeezed lemon juice
2 tsp oregano
1 tsp dijon mustard
3 cloves fresh minced garlic
pinch of pepper
combine all into a sauce pan and heat until it is bubbling.
Let cool to room tempature.
Pour over 2 halved pheasants and marinade for at least 3 hours (I let it sit for a full day). Turn package over several times.
Broil or BBQ pheasant. use reserved marinade on pheasant every 5 minutes or so.
I skinned mine and wrapped in bacon to keep moist. Very good.

Just a thought to add. I use my pressure cooker to cook drier meats, like lean pork and Cornish Game Hens. It keeps the meat very moist. I wonder if it would not work well with pheasant? I hadn't tried it yet but I will, since I do 99% of the cooking in our house. I love my wife but she is not known for her cooking skills. The first time she made me Jello, I choked on a bone!

I picked that little gem up 100 years ago when I was in the Navy. Haven't used it in a long time but it seemed appropriate here. Glad that you enjoyed it.
