Anybody have a good recipe for jerky?

I have some meat from last year's buck and thought about making it into jerky for this years camp.

This one is my favorite. Now that you mention it I should be emptying the freezer and making jerkey with last years venison also



3 tablespoons salt
1 table spoon Lawerys seasoning salt
1 tablespoon black pepper
8 dashes Worcestershire sauce
1 fresh lime squeeze well
3 ounces Wrights liquid smoke
1/2 cup apple vinegar
3 dashes soy sauce
4 or 5 cups water


The amount of each ingredient depends on the amount of meat you wish to prepare. The amounts I listed would accommodate one average size hindquarter. Mix all ingredients in the same large container. I like to use warm water so that the salts dissolve quicker. Slice your venison into 1/4-inch thick (or so) strips. Soak the meat in this marinade for at least 24 hours. Refrigerate while soaking. Place the strips on the racks of your trusty food dehydrator. Check the meat regularly as you do not want it to become rock hard, nor do you want it to be too moist. 10-12 hours will usually do it. If you have to do multiple batches, fear not. The longer the meat stays in the marinade, the better the taste.
