What would be a good choice for a scope for a henery big boy 44 lever? I can no longer shoot very well with open sights. I would like to spend between 300 to 500.

Any of the 1-4 or 1-6 would be good choice, On a 44 mag lever gun one of the smaller red dot sight would work fine.

You won't get beyond much 100 yards with the 44 lever gun so 4x is plenty, I agree that a 1.5-5x variable is plenty. You can get a Leupold VXIII for $399 in that variable range.

Don't forget to use tall rings or add a hammer extension so you can get your thumb between the hammer and scope tube.
See thru rings are popular on lever guns for this reason but high to extra high rings will probably be OK.

depending on what ranges you will be typically shooting and in addition to the 1-4 or 1-6x scopes, a 2-7 or 3-9 would be more than adequate. Im a big fan of the Vortex Diamondback. I have a crossfire on my .22 and my uncle put a diamondback 4-12x40 on his new deer rifle and we both have been very pleased with their performance. I cannot say enough good things about them. You can get a diamondback for $170ish to $270ish depending on reticle and magnification range and have a no BS VIP warranty.

Weaver, Redfield, and Nikon are worth mentioning too.
