I've been starting to fish a little more lately. Recommendations on a fillet knife to actually clean and eat my catches? Mainly just gills and perch right now. Thanks

Pick your level. They have been of good quality for decades. Not the most expensive top of the line, but you are not going to find a better value for the price.

i have tried several cheap ones over the years. Rapala knife for $25-50 work well.
if you are looking for a high quality one i would strongly recommend the Wuustoff . they are pricey but a very good knife if you do a fair amount of fishing it would be a good investment.

for walleye, perch, and gills... the rapala is a nice knife, I lucked into a wusthof culinary which is better, but still find myself using the rapalas sometimes.

for big stuff like salmon and steelhead, a victorinox cimeter knife is the ticket.

Cutco. I have their fillet knife and it's the bomb. You can adjust the length of the blade for either blue gills or chinook salmon. The blade holds its edge better than any fillet knife I've owned. The sheath has a honing stone built in it and the handle opens up like pliers so you can grab a hook to remove it or hold the fish while you fillet it. About $90. Not cheap, but you get what you pay for.

Kershaw 7 Step Adjustable Fillet Knife
[KK-1240]

This knife is the best buy I have a cutco as above and it is wore out and wont lock in any position.
In my search to replace it I found the Kershaw this is every bit as good as the cutco I paid $35.00 for my Kershaw.
Kershaw discontinued making it how ever I found the below link that says it is in stock and the price is about half of what I paid for mine 4 years ago. Since it has been discontinued I may order myself another one for that price.

Normark presentation with rubber handle. looks like a Rapala but with a stiffer blade

It looks like Normark & Rapala are one in the same,my old presentation Normark is somewhat like the 2nd one

But the wood handled ones cost more and work well also.I have several Rapala knives & baits
