Does anyone know of anyone who has workshops on Knife fighting or Defencive knive techniques

If you get the Outdoor channel with your tv plan there is a show called Best Defense. One of the guys on the show has had diff. segments where he shows what you can do with a knife to defend yourself. You could also go to outdoorchannel.com/bestdefense and see diff. video clips.

I know it's an old thread, but I'll add my 2 cents.

Unless you're starting off from almost no fighting skill at all, seeing an instructor may not do much for you if you read up on techniques and practice them extensively and regularly with a partner using dummy knives.

The truth about knife fighting is that it's not a knife fight, it's a fight. A knife is one or 2 hands full of stabbing ability, but the rest of your body also is important to account for. It would take a smart, well rounded person to side kick an adversaries knee in while holding a fighting knife, but it could be the best move. To put it another way, stabbing and slashing are no more complicated and little different than chops and punches done in martial arts. It requires the same level of speed to do well. This is why I would say that standard no or little nonsense unarmed SD training is much more useful for knife fighting skill than knife specific classes.
