Having been eyeing a lot of 1911's lately (even though I decided against it ... for now) I've kind of wondered the same thing. From what I've seen, I think it's mostly "what you look at". A lot of the 1911's that are commonly displayed, advertised, and easily found are the ones that have A LOT of "little extras" put into them. Compare... let's say a Wilson Combat Tactical Elite which is the Lamborghini of 1911's IMO... against any Glock. (This isn't comparing usefulness or value btw, just "what they are").
The Wilson 1911 is absolutely LOADED with both Aesthetic and Functional selling points.
Aesthetics aside, it's a metric crap-load of super high grade high-hardwall steel. *Kaching*
It has both a grip safety and a manual safety. *Kaching*
It has fiber-optic front sites. *Kaching*
1" accuracy at 25 yards Guarenteed (out of the box) *Kaching*
Match Grade barrel *Kaching*
Loads of milling upon above mentioned carbon steel *Kaching*
Add all the aesthetics *kaching kaching kaching*
Let's look at a Glock 21
Plastic frame
almost 1 lb less metal than above weapon (and not nearly as dense)
almost no milling
Absolutely no aesthetics
Trigger Only saftey (less mechanics)
Striker Fire (less mechanics)
"It's a plastic and metal never-fail brick"
...
The reason that Glocks are so dependable and well-loved is because "They just work"... well they just work because they are insanely simple... when you want something as advanced and complicated as a Wilson 1911 to "just work" as well as a Glock, it takes a lot of engineering.
These were obviously the "extremes" of the spectrum, but I think the reference is still valid. 1911's take a lot of work to make reliable, and are generally expected to be absolutely reliable. More simple frame/system guns are cheaper because they are easier to build.
