I'm guessing even if he did a few of those per year that he would "retire" from dishwashing.

The dish washing is done to help out with the restaurant that his son and wife run. His "work shop" is in a corner of the backroom of the restaurant.

A close-up shows the engraving and gem settings to be rather crude.
